Oatmeal Meat Loaf Muffins with Horseradish Frosting

Some believe that rolled oats help boost milk production. That hasn’t been scientifically proven, but we do know that eating whole grains is a great way to stay full longer. So get your oat on.

Ingredients


  • FOR MUFFINS:
  • 2 eggs
  • 1 156mL can tomato paste
  • 2 tbsp or so dried sage, thyme, tarragon, oregano, rosemay or savory
  • 1 tsp salt
  • 1/2 tsp of your favourite hot sauce
  • 2 lbs medium ground beef
  • 1 cup any rolled oats
  • 1 large onion, finely chopped
  • FOR TOPPING:
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp any mustard
  • 1 tbsp prepared horseradish

Instructions


  1.  Preheat your oven to 375°F. Turn on your convection fan if you have one. Lightly oil a muffin pan.
  2.  Lightly whisk the eggs in a large bowl. Whisk in the tomato paste and seasonings. Add the ground beef, oats and onions. Use your hands to thoroughly blend the works together. Evenly mound the seasoned ground beef into the muffin cups.
  3.  Whisk together the topping ingredients and brush evenly over the meaty muffin tops. Bake until cooked through and glazed, 25 to 30 min. Serve with mashed potatoes and share!
