Oatmeal muffins with apple

What You Need:


  • 1 c.    Quick Oats
  • 1 c.    Plain Yogurt
  • 1        Egg
  • ⅓ c.   Brown Sugar
  • ¼ c.    Vegetable Oil
  • 1c.      All Purpose Flour
  • 2 tsp.   Baking Powder
  • ½ tsp.   Baking Soda
  • 1 c.     Chopped Apple
  • 2 tbsp.  Sugar
  • ¼ tsp.   Cinnamon

Instructions:


  • Heat oven to 400 degrees.
  • Line a muffin pan with muffin cups and set aside.
  • Stir together oats, yogurt, egg, brown sugar and oil. Allow to sit for 10 minutes.
  • In a separate bowl, sift together flour, baking powder, baking soda.
  • Stir into yogurt/oat mix.
  • Add apples to the mixture and stir just until mixed. Place in muffin cups and sprinkle with cinnamon and sugar.
  • Bake for 18 to 20 minutes until knife in center comes out clean.
